Christabel’s Chocolates are made entirely by me, in Roberts Creek. I like to use local ingredients whenever possible: wild blackberries and salal berries, blueberries which I pick at Dakota Ridge, rhubarb from my garden, raspberries from my friend’s organic garden, balsamic vinegar from the Sunshine Coast Olive Oil store and blackberry port from Saltspring Island. I enjoy coming up with new recipes and different flavour combinations. Using fresh berries, fruit, and sometimes alcohol, enables me to create centres that ‘pop’ with flavour, without being too sweet.
